黃金葡萄乾醬 Golden Raisin Sauce

材料 Ingredients
紅蔥頭丁 Minced shallot 2大匙 Tbs
薑末 Minced ginger 1/2大匙 Tbs
特級初炸橄欖油 Extra virgin olive oil 1+2 大匙 Tbs
黃金葡萄乾 Golden raisin1/4 杯 cup
水 water3/4 杯 cup
鹽 Salt 1/3 小匙 tsp
黑胡椒 Ground black pepper 1/4 小匙 tsp
黃薑粉 Turmeric powder 1 小匙 tsp
蜂蜜 Honey 1 小匙 tsp
干邑白蘭地 Conac1 大匙 Tbs
雪利醋 Sherry vinegar 1-1/2 大匙 Tbs

做法:
1.將1大匙橄欖油,紅蔥頭丁和薑末放進一個燒熱的鍋,用中火炒香。
2.加入葡萄乾和水煮滾。轉小火,繼續煮8分鐘。熄火後加入白蘭地,雪利醋,蜂蜜,黃薑粉,鹽,黑胡椒和2大匙橄欖油。
3.全部材料倒入果汁機內用高速打到沒有顆粒。



PROCEDURE
1.Add 1 tbs of olive oil, the minced shallot and ginger to a heated pot. Sauté over medium heat until aromatic.
2.Add the golden raisin and water and bring the mixture to a boil. Turn the heat to low and continue to cook for 8 minutes. Turn off the heat. Add the brandy, sherry vinegar, honey, turmeric powder, salt, black pepper and 2 tbs of olive oil.
3.Transfer the mixture to a blend and run the machine over the high speed until the sauce is smooth.
